Quick question: If I change my camera offset, will I need a new matching dark library?

Yep. 

Gain, Offset or sensor temperature - all of those, if changed, require a new set of darks. 

For my camera I have the following
30 of each 20, 30, 60, 120, 180, 300, 600, 900s, at Gain 120, offset 50 at -10°C
30 of each 20, 30, 60, 120, 180, 300, 600, 900s, at Gain 0, offset 100 at -10°C
30 of each 20, 30, 60, 120, 180, 300, 600, 900s, at Gain 120, offset 50 at -20°C 
30 of each 20, 30, 60, 120, 180, 300, 600, 900s, at Gain 0, offset 100 at -20°C

This covers me for light polluted or dark sky shooting, in both summer and winter..

I refresh my dark libraries periodically, by deleting 10 of the current set of 30 of each set, and replacing them… so the 'average noise profile' slowly changes along with the cameras noise profile.
